You can get by with a little hand juicer for occasional use, but only an electric juicer will have you juicing a dozen citrus in 2 minutes. Depending on what you are making, you may want to filter out the pulp with a sieve or chinois. Although pulp can be a nice touch that says "fresh" to consumers of your ice cream, I usually opt for silky smooth ice creams and sorbets. The freshness comes through loud and clear with the flavor.
