Like with any gourmet cooking, the freshness and quality of ingredients plays a large role in the taste of the finished product. Most people don't get the opportunity to taste caramels, toffee or truffles that are less than a week old. Though the candies I make still taste great weeks after making them, the taste does change over time. Each candy has its own freshness timetable, but I aim to have all my candies delivered and consumed within 2 weeks of making them. I don't do any special refrigeration for my candies, as I am wary of changing temperature and humidity levels and their unsightly effects on chocolate.
