Cookie sheets are often overlooked when searching for ways to make your cookies better. I've baked on all kinds but finally settled on some air-bake cookie sheets. Good industrial thickness jelly roll pans work well, too. Avoid thin, dark colored sheets. I haven't tried any of the newer non-stick sheets on the market, but I have started to experiment with Silpat baking mats.
