This grater is a must in the kitchen. Great for citrus since you can better control how close you get to the pith, it also works well for grating hard cheeses like parmesan. Save your old, four-sided grater for nachos and carrots. Microplane graters come in a variety of widths, but I prefer the narrow wand for its ability to handle the tight curves of small citrus.

When grating citrus rind, be sure to constantly rotate the citrus as you make each pass. Even a single pass along the entire length of some graters can result in some bitter pith being shaved. Since there is less pith with a microplane grater, you can usually increase the amount of zest called for in a recipe to produce more citrus highlights without excess bitterness.
