You probably have at least one cutting board, but do you have one that you don't use to cut meat or aromatic fruits and vegetables? Consider purchasing one for candies and pastries only. For candies and pastries, buy a good sized cutting board.
For cutting caramels, I wet a paper towel with safflower oil and then wipe down the surface. Soft caramels will stick to almost anything. My cutting board has very fine texture to it, which really helps keep caramels from sticking when slicing them.
